he colourful French macaron
is a cookie with a soft ganache
centre sandwiched by two
crispy pastry shells made with
ground almonds and meringue. Don’t
confuse a French macaron with a macaroon, a soft, chewy cookie typically
made with sweetened coconut, sugar
and egg whites, and often partially
dipped in chocolate.
Although they are a popular French
pastry, legend has it that macarons were
created in an Italian monastery. It is
believed they were brought from Italy to
France in the 16th century by an Italian
chef of Queen Catherine de’ Medici.
At that time, the macaron was just
a simple cookie, but, in 1830, Parisian
pastry chefs joined two shells together
with a ganache centre (a whipped
filling of chocolate and cream or fruit
preserve mixed with cream), creating
the French macaron.
Macarons can be found in a variety
of seasonal flavours, such as crème
brûlée, dulce de leche, red velvet,
mandarin dark chocolate, chocolate,
lemon, raspberry, pistachio, blood
orange, blueberry and white chocolate.
Macarons, which should be
refrigerated, are perfect for many
